Recipe: Quick and Easy Tex-Mex Spanish Rice

I’m currently in my last year of college, and if you’re like me, you’re busy. Between taking care of the chores to be done around the house, and for me, homework and writing papers, it feels like there just isn’t enough time to create a healthy and fulfilling meal.

It was on one of those busy nights when my husband got home late from work that I invented this variation on Spanish rice. It is literally just a few ingredient tossed together and simmered on the stove. That simple. And best of all, its delicious. So, let me show you how to make it! ๐Ÿ‘‡

For your convenience, I have taken pictures for you to visually follow along. This isn’t a substitute for reading the recipe, however. So please, make sure to read the recipe. But, really don’t sweat it too much. ๐Ÿ˜… The measurements are not hard and fast. You can adjust them as you would like without ruining the recipe. You’ve got this! ๐Ÿ’ช

First, you want to make sure to sautรฉ your diced onions and peppers together until they begin to get tender.

Next, add one pound of your favorite meat. (๐Ÿ„๐Ÿ–๐Ÿ“๐Ÿฆƒ๐Ÿ๐Ÿ‘)
I have only tried this with ground beef, and diced chicken breast, but I am sure you can use any meat you would like. I used 85% lean ground beef here and it tasted very meaty in the end (in a good way!). So, if you want a leaner taste choose poultry or consider lessening the amount of meat you use by half.
After you thoroughly cook the ground beef and veggies, toss in your taco seasoning and add any salt and pepper you desire here.

I like to add the diced tomatoes next, but you can add the rest of the ingredients all at once if you are in a hurry. ๐Ÿคค
After you have added all the ingredients, mix them together and heat everything thoroughly.
Serve with your favorite shredded cheese and a dollop of sour cream on the side. You can also add sliced lime to garnish it as well if you would like. ๐Ÿ˜
